Recipe: Keto Blueberry Muffins

As I adjusted to my new diet, there were a few dishes that felt like “Aha” moments, giving me confidence that I could stick with it. One of those dishes was blueberry muffins. These muffins had less than ten net carbs each, all wholesome ingredients, and no added sugars. They were perfect for my diet and my sweet tooth. And as a bonus, they’re incredibly easy to make.

Here's the recipe:

  1. Preheat the oven to 350 degrees F (177 degrees C).

  2. Line a muffin pan with 12 muffin liners.

  3. In a large bowl, mix together the following dry ingredients:

    • 2 1/2 cups almond flour

    • 1/2 cup monk fruit sweetener

    • 1 1/2 tsp baking powder

    • 1/4 tsp salt

  4. In a medium bowl, melt 5 1/3 tbsp butter (or 1/3 cup coconut oil), then add:

    • 1/3 cup unsweetened almond milk

    • 3 large eggs

    • 1/2 tsp vanilla extract

  5. Mix the wet ingredients, then pour them into the dry mixture and combine.

  6. Fold in 3/4 cup blueberries (gently mix them in).

  7. Distribute the batter evenly among the muffin cups.

  8. Bake for about 25 minutes, or until golden brown on top.

  9. Place the muffins on a cooling rack and enjoy while warm. They’re even better the next day!

I can’t stress this enough. Even though this is great from a keto standpoint, it is still very important to use good, clean ingredients. I have put my preferred ingredients for these muffins below. If you can’t find these items at your local store, try to use grass-fed organic butter, pasture-raised organic eggs, and almond milk that has no added sweeteners or preservatives.

  • Almond Milk: I use Califia Farms Organic Unsweetened Almond Milk. Notice how it has the “Only 3 Ingredients” stamp at the top. Water, almonds, and salt are the only ingredients needed for good almond milk.

  • Eggs: I use Vital Farms Pasture-Raised Organic Eggs. Eggs are a huge part of my diet as they are a great source of protein. These eggs are the best you can get. As an added bonus, you can scan the QR code to see the chickens that laid your eggs live, ensuring they are treated extremely well.

  • Butter: I also get my butter from Maple Hill. It is 100% grass-fed and organic. For baking, I use unsalted butter. But in my experience, if you only have salted butter that is fine too.

  • Monk Fruit Sweetener: A 1:1 sugar replacement with a low carb count and no added sugars. I like Whole Earth and it is sold at Costco.

  • Almond Flour: As long as the only ingredient is almond flour, you should be good to go. I opt for the Family Size at Whole Foods, or the Kirkland brand at Costco is good too. I use almond flour often and go through it quickly.

  • Blueberries: I use organic frozen blueberries, and sometimes I opt for organic frozen wild blueberries as well.
